Ingredients

  • 500g ground veal-pork mix; 1 stale roll soaked in milk; 1 egg; 1 minced onion
  • 4 anchovy fillets, minced fine (the historic secret; do not tell the children)
  • 1L light beef or vegetable broth for poaching
  • Sauce: 40g butter, 40g flour, poaching broth, 100ml cream, 1 egg yolk
  • 3 tbsp capers + a splash of their brine; lemon; boiled potatoes and beets alongside

Method

  1. Mix meatballs gently with the soaked roll, egg, onion, anchovy; shape golf balls.
  2. Poach, never fry, in barely simmering broth 15 min; keep the broth. 15 min
  3. Roux; whisk in the broth to a silky white sauce; cream, capers, brine, lemon.
  4. Temper in the yolk off heat; return the klopse; dust with parsley.

This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.

  • Taken to the stage the dish named and no further, judged against that colour (pale, blond, or brown to brick), and it got there slowly enough to have coloured evenly.
  • It is smooth and mobile: a paste with no dry pockets of flour and no lumps, loosening as it warms rather than sitting stiff in the pan.
  • The raw-flour smell has gone and been replaced by the toasted, biscuity smell of its stage, with nothing acrid behind it.
  • No black specks anywhere. One scorched fleck condemns the batch; it cannot be stirred back in and it will be tasted in the finished sauce.

Where it goes wrong The heat was too high and the corners of the pan went unstirred, so it scorched at the edge; black specks run through the finished sauce and carry a bitterness that no amount of seasoning covers.

  • The hot liquid went into the eggs a little at a time with constant whisking, and only then did everything go back to the pot.
  • The heat under it stayed gentle throughout and it was never allowed to boil.
  • Stirred continuously and right into the corners of the pan, where it thickens first and sets unnoticed.
  • Judged by behaviour: it thickens enough to coat the back of a spoon and hold a clean line when a finger is drawn through it.
  • Taken off before it looks finished, and strained. Residual heat carries it the rest of the way, and a custard held on the heat until it looks right arrives past right.

Where it goes wrong The hot liquid went in too fast, or the pot went back over full heat to save time. The yolks set into threads before they could thicken smoothly, and a scrambled custard does not come back; straining hides a little of it and nothing hides the rest.
