Lasagne Verdi alla Bolognese

  • 400 g farina 00
  • 2 whole eggs
  • 100 g cooked spinach, squeezed bone dry and pureed
  • 80 g pancetta, chopped to a paste
  • 200 g soffritto: onion, carrot and celery in equal weight, diced fine
  • 300 g beef skirt or chuck, minced coarse
  • 150 g pork belly, minced coarse
  • 200 ml dry white wine
  • 30 g double tomato concentrate
  • 500 ml whole milk
  • 1 litre light beef broth
  • 1 litre whole milk, for the besciamella
  • 70 g unsalted butter and 70 g farina 00, for the besciamella
  • 150 g Parmigiano Reggiano, grated
  • 60 g unsalted butter, for the dish

Method

  1. Render the pancetta slowly, add the soffritto and sweat it 20 minutes until it collapses to a sweet jammy base with no raw onion smell, then raise the heat and brown the beef and pork until the pan is dry and the meat catches brown on the bottom. 20 min
  2. Deglaze with the wine and cook until the sharpness is gone, stir in the tomato concentrate, then feed in the milk and broth a ladle at a time over 3 hours at a lazy blip, until the sauce is brick brown and a spoon leaves a clean track across the pan. 180 min
  3. Knead the flour, eggs and spinach 10 minutes to a firm green dough, rest 30 minutes, roll by hand to 1 mm, then blanch the sheets 20 seconds, chill them in cold water and lay them flat on cloths until the surface is dull and dry. 10 min
  4. Cook the besciamella out until it coats the spoon and tastes only of milk and nutmeg, with no chalk of raw flour on the tongue.
  5. Build 6 thin layers, each barely veiled with ragu and besciamella and dusted with Parmigiano, dot the top with butter and bake at 180C (350F) until the edges are lacquered dark and the centre trembles when you shake the dish, about 40 minutes. 40 min

This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.

  • The pan still holds its fond. Nothing has been rinsed, wiped, or soaked, and the browned layer is intact on the floor.
  • Excess fat was poured off first and the browned layer left behind; the fat is not the flavour and a sauce carrying all of it will not come together.
  • The liquid went into a still-hot pan and the floor came clean: scraped while it bubbles, the base goes from stuck brown to bare metal and the sauce darkens as it takes it up.
  • The fond was brown and not black. A burnt floor dissolves into bitterness that cannot be seasoned out, and is better washed away than deglazed.
  • Reduced first and seasoned afterwards, tasted at the consistency it will be served at rather than at the start.

Where it goes wrong The pan was left to stand and go cold before anybody came back to it. Cold fond will not dissolve, so the scraping lifts nothing, and the sauce arrives thin and pale with the flavour it was supposed to carry still welded to the metal.

  • It rolls and shapes without fighting: it stays where it is put, and it does not spring back or shrink on the bench between passes.
  • The surface is smooth and supple rather than dry, cracked, or skinned over.
  • It is at the temperature the next step needs: cold where the fat must stay solid, cool and relaxed where it must be rolled thin.
  • Baked, it holds the dimensions it was shaped to rather than shrinking back from the edges of the tin or the rim of the dish.

Where it goes wrong The rest was skipped or shortened, so the gluten was still tight: the dough fought the pin and sprang back thick and uneven, then shrank down the sides of the tin in the oven.
