Ingredients

  • 1.5 kg beef short rib, cut into single bones
  • 1 kg mandioca mansa, peeled, in 6 cm lengths
  • 300 g onion, diced
  • 6 garlic cloves, crushed
  • 350 g tomato, chopped
  • 2 bay leaves
  • 1 pimenta malagueta, left whole
  • 30 ml sunflower oil
  • 1 litre water
  • 15 g salt
  • 20 g cheiro-verde (spring onion and parsley), chopped

Method

  1. Brown the ribs in the oil in batches until every face is crusted and the pan base is dark brown; a crowded pan steams and the meat stays grey.
  2. Sweat the onion and garlic in the same fat, scraping until the crust dissolves into the onions.
  3. Return the ribs with tomato, bay, chilli, salt and water and simmer covered at a bare tremble until the meat pulls off the bone with no spring, 2 to 3 hours unattended. 180 min
  4. Add the cassava, cutting the woody cord out of each piece as you go, and cook uncovered until half the pieces have collapsed and the liquid has thickened around the rest.
  5. Fold in the cheiro-verde and check the salt; the sauce should coat the bones rather than pool around them.

How to tell it is going right

This dish has no standard of its own yet. It is judged on the techniques it exercises: checked at the pan, while there is still something to be done about it.

  • The surface is read rather than assumed: bubbles break slowly in one or two places, or the surface merely shivers, and it does not reach a rolling boil at any point.
  • It was held there: the pot was watched and the heat adjusted rather than set once and left, and there is no tide mark up the pot wall from a boil-over.
  • The liquid stayed as clear as it should be: no clouding from agitation, and no fat churned into an emulsion through it.
  • Whatever is in the liquid is still intact: nothing shredded, broken up, or worried apart by movement.
  • The level is roughly where the elapsed time should have left it; a large drop is the evidence that it ran hotter than this while nobody was looking.

Where it goes wrong It was brought to a boil and then left on the same heat, so it churned for the whole cook: the liquid clouded, the fat emulsified into it, and the solids broke apart into the broth.

  • No colour anywhere: tipped under the light the pieces are translucent to pale gold, with no tan edges, no brown tips, and no browned flecks suspended in the fat.
  • The pan is quiet: a low steady hiss, not a crackle. A crackle means the moisture has gone and browning has already started.
  • The largest piece pressed against the side of the pan collapses without resistance and with no crunch left at its centre.
  • The fat is still clear and loose in the pan and the pan floor is clean: nothing caught, nothing browned on to deglaze, because there was never any fond to build.
  • It tastes sweet and mild with no raw allium bite at the back of the throat, and none of the roasted sweetness that belongs to the next technique up the heat scale.

Where it goes wrong The heat was too high and nothing covered the pan, so the pieces took colour before they softened; the finished dish carries a roasty sweetness where it wanted a clean one, and the pieces are still firm at the centre under browned edges.
